Place the flour in a microwave safe bowl.
Microwave for 10 seconds at a time until the internal temperature reads 165 F on an instant read thermometer. The flour will be clumpy and cracked on the surface.
Sift the flour to brake up the clumps.
Your heat-treated flour is now ready to use.

Heat the oven to 250 F.
Sprinkle the flour in a thin layer on a baking sheet.
Bake until the internal temperature reaches 165 F on an instant-read thermometer — about 20 minutes. The flour will be clumpy and cracked on the surface.
Sift the flour to brake up the clumps.
Your heat-treated flour is now ready to use.
