Heat Treated Flour

Flour can contain E. coli and other bacteria so be careful. Only use pasteurized or heat-treated flour.

Do it yourself:

In the microwave:

  1. Place the flour in a microwave safe bowl.

  2. Microwave for 10 seconds at a time until the internal temperature reads 165 F on an instant read thermometer. The flour will be clumpy and cracked on the surface.

  3. Sift the flour to brake up the clumps.

  4. Your heat-treated flour is now ready to use.

In the oven:

  1. Heat the oven to 250 F.

  2. Sprinkle the flour in a thin layer on a baking sheet.

  3. Bake until the internal temperature reaches 165 F on an instant-read thermometer — about 20 minutes. The flour will be clumpy and cracked on the surface.

  4. Sift the flour to brake up the clumps.

  5. Your heat-treated flour is now ready to use.
